We often look at a banana and think “oh, it’s far too ripe” or “oh dang, that fruit is too green!” which is a shame because quite often different stages of a fruit’s maturity have different benefits.
The greener a banana is, the more resistant starch it contains. Unlike (over) ripe bananas, which contain more sugar, green bananas are a great source of carbohydrate as they cause a low rise in your blood sugar level.
Ripe bananas with two cubes of dark chocolate or a handful of nuts or a coconut yogurt, or a piece of smoked salmon make a great meal for either people with insulin resistance as well as for those looking to lose weight.
